Hmmm, Robin says: start with Player of Games. Then: "I like Matter and Surface Detail. I do not like Consider Phlebas." Maybe I should give it one more try with one of the recommended ones?

OK, I think I've given the Culture novels two tries now; not really a fan of either. I do like the world-building of the Culture, and I wish I enjoyed the actual books better! But I'm just fundamentally uninterested in the characters or plot here. The world building doc he wrote here is probably the most interesting part!
